Wild Blueberry Hummus Recipe

Wild blueberry hummus in a clear bowl along side carrots, nuts, pretzels sitting on a wood cutting board.

Ingredients

  • 1 can (15 oz) no salt added chickpeas, drained and rinsed
  • 1 cup frozen or fresh wild blueberries
  • Juice of 1 lemon
  • 2 tbsp tahini
  • 2 tbsp olive oil
  • 1 clove garlic
  • 1/4 tsp ground cumin
  • 2–3 tbsp water (as needed)
  • 2 tbsp crumbled feta cheese
  • Fresh mint leaves, for garnish

Preparation

  1. Drain and rinse the canned chickpeas under cold water.
  2. In a blender or food processor, combine the chickpeas, wild blueberries, tahini, olive oil, garlic, lemon juice, and cumin and water.
  3. Blend until smooth, scraping down the sides as needed.
  4. Add more water if needed to reach your desired hummus consistency.
  5. Transfer the hummus to a serving bowl. Top with crumbled feta cheese, mint leaves and a few whole wild blueberries.
